Juan Quintanilla Arnedo is the heart and soul of Sollun, a product of more than 20 years of artistic exploration. Juan has perfected his art by following his passion, intuition and by taking inspiration from the best charms that nature has to offer.  Amalgamating his passions and artistic perfection, Juan is pioneering the way forward for modern Spanish cuisine.

Juan’s art redefines Mediterranean cuisine; he cooks mostly with local  products that are native to the province. With his modern touch Juan manages to create an amalgamation of different flavors and textures, giving way to a unique gastronomic experience.

Being the pioneer of this style of cuisine in the Eastern Costa del Sol, his boldness and bold creations have positioned Sollun after 13 years as a restaurant recommended by the Michelin Guide, also becoming one of the main gastronomic references in international and local magazines .

Juan Quintanilla

Juan, Sollun’s Chef-Owner, was born in Higueruela, a small town in Castilla-La Mancha, in the province of Albacete. Following his passion for gastronomy, he began his cooking studies at Hotel Miramar School in Marbella, later traveling to London to expand his knowledge.

After a long career as Head Chef for years for several Michelin-starred restaurants, he decided to open his own restaurant in 2006. This is how Sollun came into existence in Nerja, a coastal town in the province of Malaga. The name of Sollun came from the combination of the name of his daughters Sol and Luna.
